Thanks to developing technologies, rapid microbiological methods are applied today and microorganisms in a sample can be detected and identified quickly by using biological, biochemical, molecular or chemical means.

Since many conventional methods of microbiological analysis are time-consuming, new methods of microbiological testing that hinder or at least delay the growth of the target microorganism are now widely used.

Food safety is a top priority for food producing companies. Microbiological specifications, rules and standards are now being added to the final product tests for microbiological safety. For example, HACCP Critical Control Points are based on predetermined microbiological criteria to verify that applications such as Hazard Analysis System and ISO 22000 Food Safety Management System are working.

When an unexpected deterioration problem occurs or when a number of microorganisms are detected in a product or factory environment, assessing the situation, understanding how it is and what it is related to, knowing what to do and taking precautions to prevent it from repeating are the factors that create trust in food safety. The way to achieve this is through microbiological tests. In order to determine the source of contamination, detailed tests of the relevant microorganism should be performed and identified.

The shelf life is the post-production waiting time of a food product acceptable for consumption. During this time, the product must remain safe and have acceptable sensory, microbiological and chemical properties. In general, no expiration date is given to any product that may cause the growth of pathogenic microorganisms.

Therefore, all factors that affect the growth of microorganisms must be known in advance. Product formulation, such as lowering acidity, salt and sugar levels in foodstuffs and the use of natural preservatives in place of conventional chemicals, affects the shelf life of products. In microbiological tests, it is predetermined how different microorganisms will react in different ways.

Just because an organism is in a product does not mean that it will create a problem or endanger the product shelf life. Most pathogens and degrading microorganisms need to survive and grow to reach a certain level of risk. Microbiological challenge tests are a study to determine the behavior of microorganisms in a product, and the organisms concerned are intentionally inoculated into the product.
