FSSC 22000 Food Safety Management System is designed to certify food safety systems of food producing companies that process or produce animal products, perishable crops, products with long shelf life, additives, vitamins and similar food additives.
This system was approved by the Global Food Safety Initiative in 2010. The abbreviation FSSC stands for English Food Safety System Certification, which means food safety system certification.
Food safety is a global problem not only because of the importance of human health, but also because of its impact on international trade. The globalization of food production and supply activities makes food chains longer and more complex and increases food safety risks.
Effective and harmonized food safety systems must manage the safety and suitability of food at each point of the supply chain. For this reason, the International Standards Organization (ISO) has developed the ISO 22000 Food Safety Management System standard, which applies to all businesses in the food chain and thus ensures the integrity of the chain.
In parallel with this development, harmonized certification of food safety systems is needed to build confidence that all necessary measures have been taken to ensure food safety in the previous links of the chain. For this reason, ISO has developed a technical specification (ISO 22003) which includes the requirements for organizations that certify food safety management systems.
FSSC 22000 Food Safety Management System is an ISO-based food safety management system. Therefore, the ISO 9001 Quality Management System can be easily integrated with the ISO 14001 Environmental Management System and other ISO-based management systems.
Risk management is the biggest benefit for companies by having FSSC 22000 Certificate. With the establishment of this system, a secure production environment and a management system are established to manage, monitor, verify and improve the system continuously and food safety risks are effectively managed in the company.
In addition, the company protects its existing customers thanks to the FSSC 22000 certificate. According to the statistics, one out of every four companies that have FSSC 22000 Certificate demands that their suppliers also obtain the certificate.
In addition, thanks to the FSSC 22000 Certificate, companies increase their market access. Today, large retailers and multinational manufacturers demand the certification of their suppliers. Having the FSSC 22000 Certificate creates a large market for these companies or suppliers for their products.
Finally, the benefit of having an FSSC 22000 certificate is that it is easy to comply with the legal regulations. Today, countries around the world are making changes to food safety regulations. The FSSC criteria meet all the requirements of the companies.
If businesses want to be certified according to the FSSC 22000 Food Safety Management System, they must first apply this standard. In fact this is not only required for certification, but also the FSSC Certificate is a very important component of the food safety system. A high quality and well prepared documentation is the first condition for an effective food safety system. FSSC 22000 Certificate brings esteem and competitive advantage to businesses.
Within this framework, a number of standards have been published by the Turkish Standards Institute (TSE):
TS EN ISO 22000 Food safety management systems - Requirements for any organization in the food chain
TSE ISO / TS 22002-1 Food safety prerequisite programs - Part 1: Food manufacturing
TSE ISO / TS 22002-2 Food safety prerequisite programs - Part 2: Food and beverage service
TSE ISO / TS 22002-3 Food safety prerequisite programs - Part 3: Farming
TSE ISO / TS 22002-4 Food safety prerequisite programs - Part 4: Food packaging manufacturing
TSE ISO / TS 22003 Food safety management systems - Requirements for organizations providing inspection and certification of food safety management systems
TS ISO 22004 Food safety management systems - ISO 22000 application guide
TS EN ISO 22005 Traceability in feed and food chain - Basic principles and general features of system design and implementation
This standard is revised in line with the changing needs of the day, developing technologies and new methods. The most recent revision was carried out in 2018 and the current version is FSSC 22000: 2018.
It is mandatory to comply with a number of requirements in the FSSC 22000 standard. For example, first of all, there must be a general food safety policy established by the top management of the enterprise. The entity's food safety objectives should be set in accordance with this policy. The enterprise has to keep the performance records of the system within the scope of certification. The entity must ensure effective communication with customers, suppliers, government authorities and other third party persons and organizations. Emergency plans within the facility should be prepared and tested.
Management review meetings have to be held in order to evaluate the performance of the system. Senior management must provide adequate resources, including the appropriate working environment, to ensure that the system operates effectively and to establish an adequate infrastructure.
An important requirement in the implementation of the FSSC 22000 standard is that the enterprise complies with the HACCP principles. The HACCP Hazard Analysis and Critical Control Points System is a system established to detect, control, and ensure safe food production in chemical, biological and physical critical hazard points in all activities starting from raw material supply in food production.
A requirement in the FSSC 22000 system is the establishment of a traceability system in the enterprise to identify the products. It is also imperative to establish a corrective action system and conduct inappropriate product controls in the enterprise. In unexpected situations, processes for withdrawing products from the market should be determined. Finally, monitoring and measurement methods for monitoring the effective use of the system should be defined and internal audit programs should be developed.
First, it is determined whether the organization meets the mandatory requirements of the standard and whether to proceed to the next stage.
It is checked whether necessary procedures and audits have been developed and your institution's readiness for evaluation is reviewed.
The findings that arise in the first two stages are evaluated and after all corrective actions are reviewed, document preparation is started.
